The CIA comprises several academic units, including the School of Culinary Arts, the School of Baking and Pastry Arts, and the School of Food Business, offering a comprehensive degree system ranging from associate’s to master’s degrees. Major areas of study include: Culinary Arts (classical and modern culinary techniques), Baking and Pastry Arts, Food Business Management, Culinary Science (food biology, chemistry, and physics), Applied Food Research, Sustainable Food Systems, Hospitality Management, and Wine and Beverage Management, among others.

In 2010, the CIA launched the Green Campus Initiative, committed to creating a sustainable, eco-friendly campus. The school grows its own ingredients on campus for use in classroom instruction and has implemented a three-stream waste sorting system in all kitchen classrooms, converting thousands of pounds of food scraps into compost.
